What are additives used for, and why do we need so many?
Variety and choice are important factors in our enjoyment of food. Consumers can by a vast range of food products in the shops, and food manufacturers need to have an equally wide variety of ingredients and processing methods at their disposal if they are to satisfy consumer demands.
The precise nature and purpose of a food determine what additives will be needed, as will the way in which it is processed. Different additives have different properties, even if they are designed for the same purpose such as preservation or emulsification.
The examples here show who these differences – which can be very subtle – are used in food products.
It is only when one stops to consider their specific properties and subtle differences, precise uses and the extra effects they can have when mixed together that it becomes evident that such a wide variety of additives is essential.
